As advocates for Wisconsin bar and cocktail culture we’ve always been admirers of the work done by Brian Bartels.

Bartels, who was born and raised in Reedsburg, Wisconsin, cut his teeth bartending at the Great Dane and Paul’s Club in Madison before venturing to New York City and helping to open and operate a myriad of bars and restaurants as the beverage director for Happy Cooking Hospitality.

In 2020 Bartels would return to Madison to open the instant classic Settle Down Tavern and soon thereafter Oz by Oz and Turn Key Supper Club.

In addition, to his prolific record of opening successful bars and restaurants, Bartels is also a gifted writer, having penned the seminal Bloody Mary: The Lore and Legend of a Cocktail Classic in 2017, and The United States of Cocktails in 2020.

We at Wiscocktail Lounge, couldn’t be more inspired by what Bartels has done to champion those things that make drinking in Wisconsin different than anywhere else in the world.

So, when Brian was gracious enough to allow us to feature his Black Squirrel Old Fashioned cocktail on our fall menu we were ecstatic.

One of our core principles at Wiscocktail Lounge is to champion locally made sprits, beer and wine on our menus. In the case of of the Black Squirrel we chose Wollersheim Two Mile Bourbon which is produced about 15 miles away from the bar. What we love about using the Two Mile Bourbon in cocktails is that it is a “high-rye” bourbon, meaning that it uses a higher percentage of rye in it’s recipe than many other bourbons. This higher percentage of rye add’s a distinct spice to the usual sweetness that bourbon is known for, which allows the Two Mile Bourbon to offer a bit of counterpoint and complexity when mixed in a bourbon cocktail.

Cosmopolitan

The Cosmopolitan Cocktail: A Timeless Classic with a Modern Twist

In the world of cocktails, few drinks manage to capture the essence of sophistication and style quite like the Cosmopolitan. Often referred to as the “Cosmo,” this elegant cocktail has a rich history and an even more fascinating present, making it a favorite among cocktail enthusiasts and casual drinkers alike. Let's take a closer look at the Cosmopolitan: its origins, its enduring popularity, and how to make the perfect one.

A Brief History

The Cosmopolitan's journey to fame is as intriguing as its taste. Although its exact origins are somewhat debated, the cocktail’s rise to prominence can largely be attributed to the 1990s. It was during this decade that the Cosmo became synonymous with chic urban sophistication, largely thanks to its frequent appearances on the hit TV show Sex and the City. The show's characters, particularly Carrie Bradshaw, made the Cosmo their drink of choice, turning it into a symbol of contemporary elegance and female empowerment.

Despite its modern fame, the Cosmopolitan's roots trace back further. Variations of the drink can be seen in classic cocktail recipes, with some claiming that the original recipe was created in the 1930s by a bartender named Dale DeGroff. Others suggest it was first crafted in the 1980s by bartender Cheryl Cook. Regardless of its exact beginnings, the Cosmo has undeniably become a staple in the cocktail world.

The Classic Recipe

A Cosmopolitan is known for its vibrant pink hue and refreshing taste, striking a perfect balance between sweetness and tartness. Here’s a classic recipe to make this timeless cocktail:

Ingredients:

  • 1 1/2 oz vodka (preferably citrus-flavored)

  • 1 oz triple sec (or Cointreau)

  • 1/2 oz cranberry juice

  • 1/4 oz fresh lime juice

  • Ice

  • Lime twist or cranberry for garnish

Instructions:

  1. Fill a cocktail shaker with ice.

  2. Add the vodka, triple sec, cranberry juice, and lime juice.

  3. Shake well until the mixture is chilled.

  4. Strain into a chilled martini glass.

  5. Garnish with a lime twist or a cranberry.

The beauty of the Cosmopolitan lies in its simplicity. The vodka provides a smooth base, the triple sec adds a hint of sweetness and complexity, while the cranberry juice and lime juice give it that signature tartness. The result is a cocktail that’s both refreshing and sophisticated.

The Modern Twist

While the classic Cosmo is always a great choice, modern bartenders and home mixologists have taken the drink and given it their own spins. Some popular variations include:

  • The Cosmopolitan 2.0: Replace the cranberry juice with pomegranate juice for a deeper, richer flavor.

  • Flavored Cosmos: Experiment with flavored vodkas like raspberry or citrus to add a unique twist to the traditional recipe.

  • The Low-Cal Cosmo: Substitute diet cranberry juice and reduce the amount of triple sec for a lighter version of the cocktail.

Conclusion

The Cosmopolitan cocktail is more than just a drink; it's a cultural icon that has evolved while staying true to its classic roots. Whether you’re sipping it at a glamorous party or enjoying it during a quiet evening, the Cosmo offers a taste of timeless style and refinement. So, next time you’re in the mood for something chic and refreshing, consider mixing up a Cosmopolitan—cheers to a classic that never goes out of style!

Pimm’s Cup

A Sip of British Tradition

The Pimm’s Cup has been a staple of British summertime since its creation in 1823. It was first crafted by James Pimm, a Londoner who owned a oyster bar and wanted to create a drink to complement the food he served. His concoction, known as Pimm’s No. 1, quickly gained popularity for its unique blend of gin and herbal liqueur, and the Pimm’s Cup cocktail emerged as a classic way to enjoy it.

The Ingredients

The beauty of the Pimm’s Cup lies in its simplicity and versatility. Here’s what you need to craft this refreshing beverage:

  1. Pimm’s No. 1: This is the star of the show. It’s a gin-based liqueur infused with a secret blend of herbs and fruit. If you can’t find Pimm’s No. 1, a gin-based substitute with similar herbal notes will work.

  2. Citrus: Traditionally, a Pimm’s Cup is garnished with slices of lemon and cucumber. You can also add slices of orange or berries for a fruity twist.

  3. Fresh Herbs: Mint is the herb of choice, but feel free to experiment with basil or thyme for a different flavor profile.

  4. Fruity Mixers: Lemonade is the classic choice, but you can use a variety of other mixers such as ginger ale, soda water, or even a splash of fruit juice.

  5. Ice: To keep your drink chilled and refreshing, plenty of ice is a must.

The Perfect Recipe

Here’s a simple recipe to help you create the perfect Pimm’s Cup at home:

Ingredients:

  • 2 oz Pimm’s No. 1

  • 4 oz lemonade (or your preferred mixer)

  • Ice cubes

  • Slices of cucumber, lemon, and orange

  • Fresh mint leaves

Instructions:

  1. Fill a Glass with Ice: Start by filling a tall glass with ice cubes.

  2. Add Pimm’s: Pour 2 ounces of Pimm’s No. 1 over the ice.

  3. Top with Mixer: Add 4 ounces of lemonade (or your choice of mixer) and stir gently to combine.

  4. Garnish: Drop in slices of cucumber, lemon, and orange. Add a few fresh mint leaves for a burst of herbal aroma.

  5. Serve and Enjoy: Give your Pimm’s Cup a final stir and enjoy it immediately.

Tips for a Perfect Pimm’s Cup

  1. Chill Your Ingredients: For an extra refreshing drink, chill your Pimm’s No. 1 and mixer beforehand.

  2. Customize Your Garnish: Feel free to get creative with your garnish. Try adding strawberries, raspberries, or even a splash of elderflower liqueur for a unique twist.

  3. Make it a Pitcher: Hosting a summer gathering? Simply multiply the recipe by the number of guests and serve it in a pitcher for easy pouring.

  4. Balance Your Flavors: If you prefer a less sweet drink, use soda water instead of lemonade, and adjust the quantities to taste.

In Summary

The Pimm’s Cup is more than just a cocktail; it’s a celebration of summer, tradition, and British charm. Whether you’re enjoying a garden party, a picnic, or just a sunny afternoon on the porch, this classic drink offers a delightful blend of flavors that embody the spirit of the season. So, grab a bottle of Pimm’s No. 1, gather your favorite mixers and garnishes, and raise a glass to the joys of summer. Cheers!

  • Clover Club Sour: For a variation with a tangier profile, try adding a splash of bitters or a touch of orange liqueur.

Old Cuban

Origins and History

The Old Cuban cocktail is a relatively recent addition to the pantheon of classic cocktails. Created by Audrey Saunders, a renowned mixologist and owner of the Pegu Club in New York City, the cocktail debuted in the early 2000s. Audrey’s inspiration came from the classic Mojito and the French 75, combining elements of both into a sophisticated new creation. The cocktail pays homage to the old-school glamour of Cuban culture and classic cocktail traditions, blending them into a contemporary masterpiece.

Ingredients and Preparation

The Old Cuban cocktail is celebrated for its simplicity and elegance. Here’s what you need to make one:

  • 2 oz of aged rum: The rum is the heart of the cocktail, providing depth and complexity. Choose a high-quality aged rum for the best results.

  • 1 oz of champagne or sparkling wine: This adds a bubbly effervescence that lightens the drink and brings a celebratory touch.

  • 3/4 oz of simple syrup: This provides a touch of sweetness to balance the flavors. You can make simple syrup by dissolving equal parts sugar and water over low heat.

  • 1/2 oz of freshly squeezed lime juice: Fresh lime juice adds a bright, zesty flavor.

  • 2 dashes of Angostura bitters: These bitters add a hint of complexity and depth to the cocktail.

  • Mint leaves: Fresh mint is muddled into the mix to impart a refreshing herbal note.

Instructions:

  1. Muddle the Mint: In a cocktail shaker, gently muddle a few fresh mint leaves with the simple syrup. This releases the essential oils without overpowering the drink.

  2. Mix the Ingredients: Add the aged rum, freshly squeezed lime juice, and Angostura bitters to the shaker with ice. Shake well to combine and chill the mixture.

  3. Strain and Top with Champagne: Strain the mixture into a chilled coupe glass, and top with chilled champagne or sparkling wine.

  4. Garnish and Serve: Garnish with a mint sprig and a twist of lemon or lime peel if desired. Serve immediately and enjoy the effervescent elegance.

Why the Old Cuban Endures

The Old Cuban cocktail stands out for its perfect balance of flavors and textures. The combination of aged rum and champagne creates a harmonious blend of rich, caramel notes and crisp, effervescent bubbles. The mint and lime add freshness and brightness, while the bitters tie everything together with a touch of complexity.

One of the reasons the Old Cuban has endured is its versatility. It works beautifully as an aperitif or a celebratory drink, making it suitable for a variety of occasions. Its sophisticated profile also makes it a favorite among cocktail enthusiasts and those looking to impress with a refined beverage.

Final Thoughts

The Old Cuban cocktail is more than just a drink; it’s a celebration of the art of mixology and a nod to classic cocktail culture. Its relatively recent creation does not diminish its classic appeal; rather, it highlights the ongoing innovation in the world of cocktails. Whether you’re hosting a glamorous soirée or simply enjoying a quiet evening, the Old Cuban is a delightful choice that brings a touch of elegance and sophistication to any occasion.

So, the next time you’re in the mood for something special, consider reaching for the ingredients to craft an Old Cuban. Its timeless charm and refined flavor are sure to make your drink experience truly memorable. Cheers!
